Salmon is our go-to fish for dinner for many reasons. Matt doesn't like most other types of fish, it's low mercury (pregnancy safe), it's easy to make, and with all those omega-3s it's very healthy. I almost always bake my salmon the same way, with a simple dusting of salt & pepper, and a squeeze of lemon when it comes out of the oven. The other day I felt like doing something a little more exciting with it though, and this is what I came up with. It was so easy and tasty! This just might become my new standard way of cooking salmon.
Baked Salmon Filets with mayonnaise, parmesan, and breadcrumbs
1/4 cup mayonnaise
1/4 cup shredded parmesan cheese
1/2 ts garlic powder
ground pepper - to taste
1 pound salmon filet, cut into 3 pieces
1/2 cup bread crumbs (I used Italian style)
Lemon slices (for serving)
1) Preheat oven to 400 degrees f.
2) Mix together the mayo, parm, garlic powder, & pepper. Spread the mixture evenly over the salmon filets.
3) Sprinkle the breadcrumbs over the top.
4) Bake for 12 to 14 minutes (meat should flake apart easily when it's done). Serve with lemon.
|These noodles are the new Barilla veggie pasta; I think these ones have carrots and squash mixed in. I wasn't sure how they would be, but I was surprised to find they tasted just like regular pasta. A great way to sneak in some extra vegetables!|
